Heinz Beck collaborates with Finestra to celebrate Solaire’s 12th anniversary

Solaire Resort Entertainment City has long been a favourite destination for those seeking rest and recreation in the heart of the metro. It has been the site of many celebrations, from New Year’s and Christmas to birthdays and, of course, anniversaries. For its 12th anniversary, this cradle of hospitality is collaborating with several incredible international chefs to curate limited-time menus at its restaurants. The acclaimed chef Heinz Beck joins Finestra Italian Steakhouse, bringing with him over 40 years of experience in Italian cuisine.

His career has brought him in touch with all manners of techniques and perspectives, and as such, he is not defined by any single dish. “It’s not possible to summarise with one dish my person,” he mused. Beck’s dishes have an almost medicinal aspect to them, fusing together these two disciplines with a focus on their health and nutritional benefits. “By eating in a proper way, we can age better. As we grow older, we can remain in good condition.” 

His expertise is evident in over a dozen books he has authored (and co-authored) in the fields of culinary arts and medicine. But his passion especially shines through in every plate he serves. “Cooking is one of the most generous professions existing in the world. You are doing it because you love the people who are coming into your restaurant, and you do your best for them to be happy,” he beamed. 

His affection for Italian fare began when he started working in a variety of restaurants. He gravitated towards Mediterranean food culture, further reinforced when he married his wife, Teresa, whose family hails from Palermo. This resulting fervour shines through in his collaboration with Solaire’s Finestra.

The 6-course menu begins with the appetiser: marinated amberjack in celeriac seawater and oxidized chocolate, followed by an antipasto of scampo, a ragù sauce with sweet peppers, and green gazpacho. A red prawn sedanini pasta with smoked aubergine coulis and croutons, as well as a pumpkin risotto, will be the next delectable main courses for guests to feast on. Next is a pistachio-crusted veal with dried fruits, and this is all brought to a close by a captivating red fruit ice sphere, coupled with tea cream and crystalised raspberries.

In particular, the antipasto highlights Beck’s proficiency and attention to nutrition, seen in his use of various methods. The ragù consists of bell peppers prepared in three different ways: some are barbecued to bring out their full flavour, others are baked in the oven to make its lycopene—an antioxidant—easier to absorb. Lastly, some bell peppers are served raw to preserve the vitamins that would otherwise be lost when heated.

Guests dining at Finestra Italian Steakhouse in Solaire Resort Entertainment City from March 14 to 16 will thus not only experience the pinnacle of Italian cuisine, but are also assured that their good health remains a priority.

With decades under his belt, Beck continues to enjoy learning new things about cooking every day. “It’s beautiful. This creativity makes it possible to reinvent yourself, and by doing this, you will remain forever young.” Beck extends this same mentality to aspiring chefs. ”It’s like building a skyscraper with a lot of levels on it. You need very deep fundamentals. Always be open to listen, to study, and to look into culture.”
