Executive Chinese chef Ho Chun-hung skilfully crafts unique home-style dishes using unique ingredients

Sha Tin 18, the Chinese restaurant at Hyatt Regency Hong Kong in Sha Tin, introduces a new menu that includes a variety of home-style dishes crafted with special ingredients for a truly unique dining experience.

Highlights include the tender braised lamb shank with preserved mustard greens and preserved bamboo shoots, available for HK$448, a twist on the traditional Hakka-style braised pork belly with preserved mustard greens.

Instead of pork belly, executive Chinese chef Ho Chun-hun uses Australian lamb shank, slow-cooked for three hours with preserved mustard greens and preserved bamboo shoots. Lamb shank is tender and flavourful. The preserved mustard greens and bamboo shoots are meticulously prepared by Ho and sautéed using homemade and premium-quality lard, creating a rich flavour that pairs perfectly with the lamb shank.
