One of F&B’s brightest rising stars, Bottega di Carna’s jazzed up menu solidifies its status as a culinary gem in Singapore
A momentous new chapter has begun for Bottega di Carna, where the unveiling of a new menu has brought on a slew of refreshed offerings. This includes premium beef cuts from famed Spanish master butchery Viñals Soler which cannot be found anywhere else in Singapore.
Opened by the “world’s greatest butcher” Dario Cecchini in June 2023, Bottega di Carna at Mondrian Singapore Duxton has enjoyed a meteoric rise, stunning diners with its impeccable service and exemplary culinary artistry.
With the sublimated menu, Viñals Soler’s ethically farmed prime cuts can now be found in signature menu items such as the carpaccio di culo (seared rump carpaccio) served with salsa verde, the beef tartare seasoned with Cecchini’s original herb salt blend, and the Fiorentina T-bone bistecca, a perennial favourite among meat lovers.

Conceptualised under the watchful eyes of Mondrian Singapore Duxton’s executive chef Kenny Huang, an alumnus of several Michelin-starred establishments in Singapore and Italy, the revamped menu is a contemporary and refined celebration of modern Italian cuisine that showcases Huang’s sophisticated approach and innovative flair.
The lobster fettuccine, for instance, features freshly-made pasta bathed in a lobster ragu cooked with the crustacean’s shells, loaded with scrumptious meat from its claws and legs. Turn also to the flavour-packed ossobuco alla Milanese, a bold combination of saffron risotto, bright and herby gremolata, and tender slow-braised veal shin.

Bottega di Carna also boasts an extensive beverage list. While Italian producers are prominently featured, the true surprise lies in the breadth of both geographical origin and varietal expression. Hidden gems include a highly-sought-after Brunello di Montalcino from the Fuligni estate, as well as a number of big format reds and champagnes for those in a celebratory mood.
Indeed, Bottega di Carna is the perfect gathering place for bon vivants. With its exceptional produce available in generous sharing portions, from a whole Dover sole to the impressive 1.5kg Stockyard 200-day grain-fed Angus tomahawk served with a selection of exquisite sauces, Huang has artistically composed a menu that fosters a spirit of shared enjoyment.

In keeping with true Italian tradition, Bottega di Carna also offers a captivating array of classic dolci, from the exquisitely tart delizia al limone (lemon mousse, strawberry compote, and white wine jelly) to the decadent spumoni baked alaska (Italian meringue, pistachio ice cream and vanilla sponge). However, it is the tiramisu that keeps fans coming back for more. Designed for sharing among two, the restaurant’s rendition of this quintessential Italian dessert is a decadent assembly of layered savoiardi (ladyfingers) delicately soaked in espresso, coffee liqueur and a velvety mascarpone cream.
