Hong Kong is undeniably food obsessed and every so often a new trendy item will take the city by storm. Some are good and some are, well, let's just say it's better to look ahead. Remember Basque cheesecakes or when rainbow-coloured grilled cheese sandwiches were a thing?
More recently, we've been seeing sophisticated arrangements of a fast-food favourite that chefs have added their own twist to, resulting in gourmet fish burgers that blow the competition out of the water.

Lobster Bar & Grill
This fish burger was originally created to cheer up a guest who had experienced an inferior fish burger elsewhere. The special off-menu item was so well received that it warranted a more permanent place on the menu at Lobster Bar & Grill. Now available on the Saturday seafood galore lunch menu, this panko-crusted sole fillet fish burger comes with cheddar cheese, minted mushy peas, tartar sauce, fries, mixed greens, herbs and lemon.

The Hawk & Aster
The Hawk & Aster's fish burger is twice as nice—what with two lightly-fried fish fillets sandwiched between a brioche bun. The fillets are topped with aged cheddar and are seasoned well with tangy tartar sauce. Served with a choice of fries or the Hawk salad, the fish burger is available on the all-day menu from Monday to Friday and on the daily dinner menu.

The Baker & The Bottleman
Executive chef Oli Marlow has added a British-style fish burger to the wine bar food menu, available from 5.30pm onwards (Thursday to Monday) at The Baker & The Bottleman. The burger consists of a thick piece of crispy beer battered cod, melted Red Leicester cheese and homemade tartar sauce between a soft, pillowy brioche bun. It's best enjoyed with a chilled glass of natural wine from the bar's comprehensive list.

Little Bao
Little Bao's rendition of the classic fish burger uses a halibut filet which is breaded in panko crumbs and fried until crisp and golden brown. Then, with a generous spread of housemade tartar sauce and melted aged cheddar, the Fish Bao 2.0 is born and is available at the Soho branch and Little Bao Diner in Causeway Bay.

Yardbird at Kin Food Halls
Available at Kin Food Halls, Yardbird's Furai-O-Fish sando uses panko-breaded locally sourced fish and tartar sauce made with takana pickles to add a little Japanese flavour to the mix. The sesame bun is lightly toasted and comes with American cheddar cheese. Kin offers it with a seaweed salad and tater tots to make it a meal.
