Sunset Grill’s new Tongue Takes Over menu features a selection of premium Wagyu across multiple courses

This summer, Sunset Grill at Sheraton Tung Chung Hotel Hong Kong has unveiled a seasonal, meat-led menu centred around Wagyu. The Tongue Takes Over menu is available until September 30, 2026 and features a selection of dishes that highlights the versatility of Australian Wagyu ox tongue. 

A highlight on the menu is the smoked Australian Wagyu ox tongue taco, which encases tender smoked meat within a crisp taco shell, where the smokiness of the meat pervades each bite. Another notable dish is the charcoal-grilled Australian Wagyu ox tongue, which is thinly sliced and flash-seared to achieve a slightly charred edge. The premium cut is paired with fermented chilli, yuzu peel and egg yolk for an elevated tasting experience.

Australian Wagyu ox tongue bourguignon follows, showcasing the kitchen’s mastery of slow-cooking through a nod to classic French techniques. A thicker cut is slow-simmered in a flavourful red wine reduction until the meat achieves a perfect, melt-in-your-mouth texture. The final expression of this premium cut comes in a 12-day dry-aged form, where the meat is prepared in-house at Sunset Grill to enhance the Wagyu’s natural umami notes. The cut is then caramelised and charred on the grill before arriving at the table.
