The chef-patron of Hotel Café Royal will be showcasing his talent at Sabayon at EQ Kuala Lumpur
From 4-15 June, 2024, Alex Dilling will be coming to Kuala Lumpur for his first guest residency in the country. The chef-patron of the two-Michelin-star Hotel Café Royal will be taking over the kitchen of Sabayon at EQ Kuala Lumpur, presenting his take on French cuisine in the spectacular dining room with sprawling views of the city.
“The biggest inspiration in food is always the product—what’s in season, what we want to do with it, and how to challenge ourselves with techniques and different flavours,” enthuses Dilling, speaking about the collaboration.

The talented chef has worked with industry legends such as Alain Ducasse, and cut his chops in renowned establishments such as New York’s Caviar Russe, The Connaught, and The Greenhouse in London.

Dilling will be offering two menus, one tailored to vegetarians, with an exclusive dinner service catering to 50 guests a night.

The evening starts with a selection of bread with Bordier butter, followed by aged Kaluga caviar with smoked Scottish salmon rillettes. This is followed by a decadent wild mushroom gratin with 36-month parmesan and black truffle, as well as olive oil poached black cod with smoked eel consommé.

The main attraction is corn-fed chicken with sauce Albufera, the last savoury course of the evening and the talented chef’s take on chicken cacciatore. Sweet endings come in the form of an unusual sourdough ice cream with salted caramel and Pedro Ximenes sabayon.

The event will also be a collaboration with Barons de Rothschild, with the hotel as the only location to experience the House’s Rare Collection Blanc de Blancs 2012. The champagne will be served in a curated box in tandem with the hotel’s 50th anniversary.
