Shangri-La The Fort, Manila welcomes guest chef Scott Brands for A Taste of Britannia, a limited-time culinary pop-up showcasing reimagined British classics and signature cocktails from June 1 to 8, 2025

Food enthusiasts in Manila are in for a treat as Shangri-La The Fort, Manila, proudly presents A Taste of Britannia. This June, BGC’s most coveted hotel, and the award winner for Tatler Best Philippines Best City Hotel 2025, is setting the table for a one-week-only culinary event that marries tradition with modern flair. The exclusive pop-up showcases the inventive talent of chef Scott Brands, the current executive chef of Shangri-La Kuala Lumpur and a culinary force trained in some of the UK’s top kitchens. From June 1 to 8, 2025, diners will have the exclusive opportunity to experience his mouthwatering reimagined British classics.

Brands is renowned for his ability to transform traditional heritage dishes into striking culinary experiences. In fact, this chef is celebrated for delivering bold, elevated plates that surprise and delight, and now, he excitedly brings his talents to the Philippines. The limited-run pop-up offers a fresh and elevated take on classic British fare, delivered through a meticulously crafted à la carte menu. Currently based in Malaysia, Brands has garnered particular acclaim for his signature beef Wellington. Among the featured dishes that he is offering in the Philippines are: the Balmoral fillet (hot smoked salmon with cauliflower cream, caramelised walnuts and citrus oil), a classic fish and chips (batter-fried cod fillet with mushy peas and tartar sauce), and a cheeky rendition of the classic Eton Mess.

A Taste of Britannia offers a thoughtfully designed à la carte menu, providing guests the flexibility to explore a variety of standout dishes. To further complement your meal, be sure to pick a tipple or two from The Bee’s Knees Gin Bar by The Back Room, a new playful feature at the pop-up. Pair your meals with a refreshing and fragrant rosemary gimlet or the aromatic lavender bramble. Their charming selection of cocktails infused with native botanicals and distinctive British twists will make that smile twinkle even brighter.

This exclusive pop-up event is held at The Hub, located on Level 4 of Shangri-La The Fort, Manila. It will be open for both lunch, from 12:00 p.m. to 2:30 p.m., and dinner, from 5:30 p.m. to 9:30 p.m.
