The iconic Alkaff Mansion is now home to two restaurants dedicated to the gastronomy of the Basque Country, plus an all-day café

1. New Concept
It was a trip to Spain’s Basque Country that inspired Joseph Ong, managing director of F&B company 1-Group, to envision a multi-concept lifestyle destination celebrating the region’s vibrant food and culture. The Alkaff Mansion provided the ideal spot, with its lush greenery, rolling hills and view of the Singapore coastline. The large two-storey property now houses Singapore’s first pintxo bar Txa, Spanish restaurant Una and Wildseed Café.

2. Authentic Basque Fare
To ensure the authenticity of its dishes, the culinary team at The Alkaff Mansion has partnered with Basqvium, the watchdog of Basque cuisine in and outside Spain. The team also includes two Basque chefs, Marta Elvira Segalés and Silvana Pascual Romero, both of whom are graduates of the prestigious Basque Culinary Institute and members of 1-Group’s Spanish development team. They all work closely together to craft menus showcasing the region’s bountiful produce, delectable cuisine and invigorating drinks.

3. Spanish Feast
Nothing defines Basque cuisine more than the ubiquitous pintxos, or small snacks typically served with drinks, and this is what you will get at Txa Pintxo Bar. Served at the bar counter, the offerings include fried padrón peppers with a light sprinkling of Maldon salt, and baguette slices slathered with piquant piquillo cream and topped with onions, pickled anchovies and sun-dried black olives.

4. Savoury Treats
Una’s head chef Tom Kung has kept the addictive fideos pasta cooked with squid ink and sofrito sauce and crowned with crisp calamari rings on the menu, but added more Basque-inspired fare such as the grilled prime rib beef. Using five- to eight-year‑old cows (instead of the typical eight to 18-year-olds used for its deep flavour and complexity), the Wagyu is seasoned lightly, grilled over charcoal and served with a piquillo emulsion.

5. All-day Café
The Alkaff Mansion also houses the Wildseed Café, an all-day floral eatery and pâtisserie tucked on the side of the mansion, which includes a play area for the little ones. This is a prime spot for a leisurely weekend brunch, especially with its enticing menu of savouries and sweets—the latter dreamed up by 1-Group’s executive pastry chef Jasmin Chew. One of her signatures is the tender coconut pea flower shortcake, which tastes as good as it looks.
