Dishes here are driven by the seasons, allowing Skillet to continually evolve and deliver boundary-pushing cuisine. Guests will first notice the restaurant’s season-driven philosophy when walking into the main dining room, through a corridor dominated by a dried floral arrangement that is reworked to reflect the botanicals of every season.

Challenging expectations while respecting tradition guides the menu here. The most recent incarnation of its degustation menu—the Autumn/Winter 2024—demonstrates this with a dry-aged Cherry Valley duck main. Sourcing its star protein from Butterworth, the restaurant then subjects it to a meticulous ageing process before pairing it with a celeriac pave and wine jus.

Local seafood receives equally soulful and refined treatment. Clams are marinated in rice wine and served alongside buttery brioche, butternut squash puree, and pickled bunga kantan to add a distinctly Malaysian accent. The cannoli amuse bouche offers another surprise, replacing the traditional pastry shell with seaweed and filling it with Hokkaido scallop tartare before finishing it with roselle jelly.

Fine wine is in no shortage here either, with Skillet’s new space housing an exceptional wine cellar alongside a dedicated lounge space where diners can sip on pre or post-dinner drinks. The bar programme deserves its own mention, playing host to a tipple inspired by classic Italian caprese salads. Combining vodka and vermouth with clarified tomato and basil cordial, the cocktail then comes together with a splash of white balsamic vinegar and lime juice.
