Four bartenders from our star-studded lineup share the skills needed to craft a perfect cocktail

Have you secured your tickets to Tatler Dining Malaysia’s inaugural Cocktail Festival? If you haven’t yet, what are you waiting for? We’re bringing together some of Malaysia and Singapore’s most celebrated bartenders for a boozy two-day extravaganza that shouldn’t be missed.

Our exciting lineup includes Penrose KL’s Jon Lee, Triptyk’s Angel Ng Ji, and Here & Now’s Affie Adut. All the way from the Lion City of Singapore comes Sago House’s Desiree Jane, The Dragon Chamber’s Isz Valentino, and Mama Diam’s He Xin.

Jon Lee of Penrose, Malaysia

“It all starts with the genuine urge to care for others, which forms the rock-solid foundation of being a bartender,” enthuses Jon Lee. “Shifting your mindset from making drinks for yourself to crafting them for others opens up doors for a world of improvement.”

Penrose’s founder and head bartender, Lee, began his career 13 years ago as a chef before switching paths to become a bartender after working in the kitchen for six years. The seasoned mixologist believes that adaptability is a key skill when it comes to making drinks. “Everyone possesses unique taste preferences, so if you recognise your signature drink may not resonate with all guests and are able to craft alternative drinks, it showcases your dedication,” he quips.

Affie Adut of Here & Now, Malaysia

“Stay hungry,” Affie Adut advises those looking to begin a career in the drinks industry. “Whether for knowledge, experience, or curiosity.” The director and co-founder of Here & Now began his culinary career six years ago in 2017 when he worked in restaurants as part of the service team during his free time.

Adut believes that every bartender should have three important skills: self presentation, product knowledge, and efficiency. “Find the best version of yourself, as that is the first thing guests notice upon walking into your bar,” he enthuses. “Whether serving a drink or interacting with customers, guests should have full confidence in you.”

He Xin of Mama Diam, Singapore

Known to friends as Hex, He Xin leads the exciting beverage program at Mama Diam. He began his career in mixology in 2020, after transitioning from his position as part of the service team at Jigger & Pony to part of the bar team.

He believes bartending is about making customers comfortable and giving them service from the heart. “It is crucial to embrace feedback with humility, as there are countless growth opportunities,” the humble bartender enthuses.

He also emphasises the importance of developing a distinct understanding of flavour and style. “While classic cocktails serve as foundational templates, profound understanding allows for creative exploration and the crafting of exceptional, personalised liberations.”

Isz Valentino of The Dragon Chamber, Singapore

“Be passionate about your craft, but stay humble,” quips Isz Valentino. Having worked in the bar industry for the past six years, since 2013, the experienced bartender knows the dedication and sacrifice it takes to flourish. “You need to have an innate drive to pursue your goals, as it is a journey of non-stop learning.”

The bar manager of The Dragon Chamber emphasises that each mixologist should have their own identity: “To bartend with passion, you need to create your own style and stay true to yourself.”
