Take a break from the city’s hustle and bustle and make your way to the newly-revamped The Lawn at Panamericana. Nestled within Sentosa Island, the outdoor space of Panamericana restaurant boasts amazing views of the ocean (and sunsets) as you tuck into head chef Eugene Chan’s extensive menu that highlights the signature dishes from the 14 countries situated along the famed Pan-American Highway.

Bring your family, friends or partner and take your pick from the three different seating options—the bar for some pre-prandial drinks and light bites; communal table for breezy weekend brunches; and the lounge for a sumptuous dinner feast. Make yourself comfortable in the plush chairs while sipping on signature cocktails such as the Pisco Disco, a refreshing but potent tipple crafted with Barsol Pisco, violet liqueur and guava. For something more tropical, the Champagne & Absinthe Colada is an elevated version of the piña colada comprising Mount Gay Rum, Gosling’s Dark Rum, coconut cream, pineapple and Panamericana prosecco.

Food-wise, Chan shares that “we offer larger cuts of steaks and larger format seafood dishes—cooked in an Argentinian asador grill” for a smoky and succulent finish. Standouts include the charred octopus tentacles, delicately grilled over woodfire to give the tentacles a good char before they are served with parsnip puree, tamarillo and negra mayo, as well as lamb al asador. The latter is slow cooked over jarrah wood for seven hours to ensure that the meat is fork-tender and extremely juicy. Mains are best had with side dishes, among which are the wood-fired padron peppers and baby corn enriched with Sriracha mayo, cheese and chives.

Desserts here are no afterthought either; the churros, in particular, are deep-fried to a crisp and golden-brown finish and served with a sweet and creamy dulce de leche.
