If you’re looking for a new Filipino restaurant to frequent, stop by Haliya in City of Dreams. The restaurant opened its doors on November 3, ready to wow diners with its modern take on Filipino favourites. In fact, over 20 of your go-to Filipino dishes have been re-interpreted by chef de cuisine Edmundo San Jose. While some favourites are best left untampered with, his twists aim to elevate our regional cuisine.

Chef Ed has been cooking to his heart’s content for 24 years now. With experiences in banquets and all-day dining in the hotel industry around Asia and the Middle East, this culinarian couldn't wait to share his journey with diners back here at home. During the 10 years he worked overseas, the chef refined his skills and has even been accoladed in several live cooking competitions, namely the Horeca Kuwait Culinary Show from 2013 to 2015. In 2016, his first year with City of Dreams, Ed led the team to the gold at the Philippine Culinary Cup as well.

“I take inspiration from staple Filipino homecooked meals, with an intent to enhance the basic flavours that we all love and grow up with. In combining the traditional way of cooking Filipino dishes with the creative techniques I’ve learned in my two decades of exposure to Asian and international cuisine, I am delighted to offer new interpretations,” chef Ed elaborates.

Since the restaurant is designed for Filipinos (and we notoriously love eating, feeding others, and sharing meals), Haliya’s dishes are good for more than one person and are best-served family-style.

Situated on the ground floor of Nüwa Manila, the establishment is named after the warrior goddess of the moonlight who was considered to be one of the most beautiful deities in Bicolano mythology. Inside the restaurant which is clad in gold, diners can expect to get the royal treatment, pampered by doting staff who are ready to cater to their every need.
