Taking its name from the largest breed of caviar-producing sturgeon, this stylish dining establishment is where guests can make their champagne wishes and caviar dreams come true
Hong Kong’s food-loving crowd has a new destination to add to their list this summer. Huso, The Pottinger Hotel's latest dining concept, is now open, welcoming guests to indulge in two of the world’s most decadent delicacies: champagne and caviar, alongside French-Mediterranean fare in an elegant setting.
Promising to be an ideal dining destination for date nights and casual group gatherings, the venue occupies the spacious ground floor of the hotel and the interior is fitted out with contemporary French art and ornaments. The walls are adorned with unique paintings by local artist, Yannes Choi Ka-yan, who was commissioned to produce sensuous, female-forward artwork that can amplify the Parisian experience.

Led by a team of caviar experts, Huso is serving an indulgent menu with modest pricing that offers a more casual approach to this luxury food staple. There’s plenty of top-quality caviar to be enjoyed, of course, but diners can also look forward to a selection of seafood including fresh oysters and lobsters. Highlights from the menu include dishes such as fresh oyster in creamy champagne and chicken broth, and the Dior Egg (named after Christian Dior), a dish with caviar served atop a soft-boiled egg enveloped in Champagne jelly.
Hearty mains are also available for sharing, with duck leg confit, picanha—slow roasted beef rump cap—and baked Chilean sea bass in lobster sauce serving as some of the more standout dishes. For dessert, options include a classic apple tart, passion fruit crème brûlée and baked Alaska flambé. The shining star of the lineup, though, is the caviar-topped soft serve ice cream that comes with Champagne jelly in the bottom of the cone.

Accompanying the food menu is a carefully curated range of Champagnes crafted with grape varieties sourced from France's Northeastern region. With the aim of promoting France’s Champagne culture to Hong Kong, guests can enjoy a drink programme that features coveted bottles from prestigious labels including Krug, Dom Pérignon, and Champagne Vilmart & Cie—all of which are hand-selected by an expert team of sommeliers.
