Speyside scotch distillery Mortlach is fully leaning into its meat-pairing credentials with a new menu titled "Meats with the Beast", comprising a selection of dishes across four restaurants. Available this November and December, the participating restaurants include Amelia, serving a 1kg Italian Masango T-bone steak; Tiffany’s New York Bar, serving mini bacon and cheese sliders with fries; The Chinese Restaurant at Hyatt Regency Tsim Sha Tsui, serving yellow-hair chicken stew, pan-fried beef ribs, and stir-fried pigeon fillet; and finally, Ichu, serving a choice of grilled ribeye or 24-hour slow-cooked pork ribs as part of its tasting menus.

At each restaurant, diners have the option to pair these dishes with a dram of some or all of Mortlach's 12, 16 or 20-year-old whiskies, all the better to savour the pairing possibilities of the scotch's nutty and smoky flavours. For more details, click here.

Get schooled in the ways of the liquor cabinet at PDT's ongoing Sunday School series, where the Landmark Mandarin Oriental's speakeasy bar invites an expert to lead a masterclass on a particular category of spirits each Sunday.

First up on November 21 is Northeast Wines & Spirits brand ambassador Tom Wood, who will be teaching guests how to differentiate between tequila and mezcal; followed by whisky aficionado Eddie Nara, who will be leading a session on November 28 that explores whiskies from the four corners of Scotland. Then, MHD brand ambassador Leo Jockovic takes over the remaining three sessions, first with a deep dive into the art of cognac appreciation on December 5; and then a journey through Champagne with a blind tasting on December 12. The series wraps up on December 19 with a wine masterclass focused on finding hidden gems among old vines. For more information or to book, call +852 2132 0110.

The Art Of The Cocktail

For those who would rather appreciate their drink from a visual point of view, Mizunara is introducing a limited-time cocktail series that attempts to combine Japanese art with mixology. Curator Noriko Nakagawa has picked a number of wamono sculptures which challenge centuries-old techniques using materials such as bamboo, ceramics and glasses to create unprecedented works. Drawing inspiration from these art pieces, Mizunara's bartender-in-chief Masahiko Endo has created a variety of cocktails which will be available for art-minded bon vivants to enjoy alongside their respective pieces between November 26 and December 9.
