Anand is known globally as the chef that redefined Indian cuisine at his now-defunct restaurant Gaggan in Bangkok, which ranked number one among Asia's 50 Best Restaurants for four years from 2015 to 2018, and number four on the World’s 50 Best Restaurants list in 2019. After parting ways with investors, Anand ventured out on his own, opening the restaurant Gaggan Anand in November 2019 which won the Highest New Entry award and fifth place in Asia’s 50 Best Restaurants list in 2021. Now, having pushed through the struggles of the pandemic, Anand will join Balbi, another award-winning chef, in Hong Kong.

At Andō, Balbi's cuisine is a unique expression of himself, blending his Spanish heritage and Italian roots with his experience in Japan, the US and beyond. This progressive cuisine, combined with the heartfelt stories connected to his food, has garnered many fans along with one Michelin star for two consecutive years and a spot on the Tatler Dining 20 list in 2022.

On November 8, the two chefs present a rare opportunity to sample their respective cuisines together with combined elements and exclusive dishes. Highlights from the tasting menu include the Gaggan signatures: yoghurt explosion and charcoal, as well as an Andō edition of the famed “Lick Me Up” dish. Other items that fuse the two chef's sensibilities include Hokkaido scallop with Indian spices and an Arroz caldoso served with king crab and curry.
