GP Reyes, Century Properties creative director and part-owner of 71 Gramercy, revealed to Philippine Tatler Dining his observation that the Filipino palate has become more sophisticated. “Filipinos now appreciate cocktails and it’s great because the Philippines is really on an upswing,” he said.
If before, club-goers and bar-hoppers would just order bottles of beer, now they have embraced the creations of mixologists and bartenders. 71 Gramercy, known as the highest nightspot in the country, is also best known for its cocktail mixes courtesy of the mixologist Tim Walters.
The Panoramic. Light, crisp, and refreshing drink that is perfect to cap off the work day. Concocted using the aromatic Belgian beer, Hoegaarden, Amaretto, and fresh sour to infatuate the senses and complement the stunning views of the city.
The Spy Glass. Centuries-old spices mixed with apple and spiked with a heavy portion of blended whisky. This cocktail lingers on the palate and unearths the taste of exploration.
LuzOn High. Mixture of strawberries and basil and topped with sparkling white wine.
Don’t Jump Julep (also known as The High Rise). Sweet pineapple with fragrant mint mixed with whisky. This libation gives drinkers a high to complement the soaring skyscrapers.
The Penthouse. Ginger concoction with a kick of spice, mixed with blended whisky and topped off with some bubbles.
The Moma. Modern Makati’s hippest nightclub offers this tropical delight of fresh watermelon and ginger mixed with the guest’s choice of vodka.
“What’s interesting is that nightlife is the barometer of how the country’s economy is doing. If bars are doing well, that means people have much money to spend. That goes well in the country’s picture,” GP Reyes said.
71 Gramercy is a place for young professionals, according to Reyes. “For me you have to own the right to party. Work hard, party hard.” And truly, the drinks by Tim Walters shoot the energy up to the roof of the highest nightspot in the city.
