A Japanese restaurant helmed by a Filipino chef has just received its first Michelin Star! Here's what to know about Soseki Modern Omakase

It's no secret that Filipinos have an incredible love for food. Talented chefs and epicures have come from our islands and have introduced the world to some amazing Michelin star-worthy food. Today, we celebrate a major victory by a fellow Filipino.

Chef Mike Collantes is the man behind Soseki Modern Omakase, an "intimate 10-seat multi-course dining experience" that focuses on exploring Japanese flavours through Floridian terra. It packs plenty of creativity onto one plate, giving chefs much control over what they serve. This June 2022, they received their first Michelin star under the leadership of chef Collantes, who called it a "long time dream" that he "never thought would come to pass". As a young chef, Collantes trained under renowned personalities such as Wolfgang Puck, Joel Robuchon, and Masa Takayama. His career in the dining industry spans over two decades, during which he's worked in leadership positions for brands such as MGM Grand, Ritz Carlton, and The Bento Group. 

 

With one Michelin star, Soseki Modern Omakase has now been branded by the company as having "high-quality food, [that's] worth a stop". The Michelin guide also points to the restaurant's "Scandinavian-style" sashimi (salmon cured like gravlax with smoked mozzarella) as a highlight of the eatery, one that unites each flavourful element seamlessly despite complex ingredients.

Chef Collantes' win, which was celebrated by many of his colleagues, was also made public on the chef's social media pages, with one photo showing the raw emotion he felt after the win. The moment his name was flashed on the screen at the Michelin Awards in Florida was also captured and uploaded on Tiktok. The chef graciously thanked his Soseki team on Instagram. And though his win is an incredibly personal dream that's finally come true, it also shows a rising trend and interest in Filipino talent and food.

In fact, a Filipino restaurant based in Chicago—Kasama—also won its first star earlier this year, helping cement Filipino cuisine's spot under the spotlight. Though we've known for quite some time, Filipino talent is truly world-class—and it's time that everyone recognised that. Congratulations to the team behind Soseiki Modern Omakase for this monumental achievement.
