The Hong Kong-based patisserie chef-turned-F&B consultant reveals her simple yet refined ways to unwind as she takes respite in her family home in Singapore
Creature comforts, safe spaces, guilty pleasures… These are just some of the little luxuries in life we don’t pay enough attention—nor give enough credit—to when it comes to escaping the harried pace and demanding pressures of daily life.
For Natalie Eng, a patisserie chef-turned-F&B consultant based in Hong Kong, she takes respite in coming back to her family home in Singapore when she needs it most—“when life gets too fast, and too loud”. She muses: “We need to consciously slow down every once in a while, and make time for our own interpretations of mindfulness and wellness”.
Having always gravitated toward desserts as a child, watching her mother bake local Singaporean cakes, Eng made the bold move to leave home for Paris at just 17 to pursue her passions in patisserie. Her classical French training was honed at Alain Ducasse’s three-starred Le Meurice, under the wing of award-winning pastry chef Cedric Grolet. Following that, she took her burgeoning brand of delicate, meticulously crafted works of dessert art to modern fine dining restaurant, Sorrel, back here on local soil, and Hong Kong’s Bâtard, which is noted for its elevated take on French contemporary fare. Today, she consults for an F&B group in Hong Kong where she focuses on the research and development of sweet masterpieces that are in line with their chef’s ideas and culinary styles, while training the pastry team to execute them. Working in F&B is tough, as many would attest to, but it takes an entirely different—and unique—level of tenacity and skill to not only operate but thrive in such world-class environments where expectation and execution are at their peak, and Eng is nothing but grace under pressure.

This is why taking time to rest, recover and reset is crucial for someone like Eng. But despite the multi-faceted, deeply technical nature of her edible creations, her ways to unwind are surprisingly simple. “At home in Hong Kong, I take pleasure in a glass of good riesling, doing my own manicures, preparing a meal for my cherie, or even rearranging objects and furniture pieces”, she describes with an adorably gentle chuckle. And back home in Singapore, the youngest of three siblings’ recovery activities are simply spending time with family over hearty, leisurely meals.
But no matter where she is, “a long, hot shower” is all it takes to immediately relax her—and an equally simple but efficacious skincare ritual. “I tend to stick to what works for me and that shows visible results on my skin.
