This hand-crafted Blanc de Blancs comes from Seier Christensen’s estate, pressed using an old Coquard press. A single-woman operation, Seier Christensen, who received a Bachelor of Science in Viticulture and Oenology from Plumpton in the UK, makes the cuvée to her tastes, with richness and structure from 10 months’ lees ageing in barrel before bottling, always underscored by the firm acidic line of the Côte des Blancs.
The wine is poured at an exclusive list of Michelin-starred restaurants in Monaco, Dubai and Singapore, as well as Seier Christensen’s own two and three-Michelin-star restaurants, Alchemist and Geranium in Copenhagen.
The nose is lightly smoky, its refined reduction tinged with brown butter and hazelnuts under which there is really refined bergamot Chardonnay fruit shading almost into bitter marmalade. A pleasant, fine mousse is offset by the sharpness of the reduction and acidity, which is a tight line through the middle. The smokiness bumps up on the finish, keeping a sense of discipline and tautness.

The wine looks quite golden in its clear bottle, but don't be alarmed, it is just that wines of this ripeness and structure are not often bottled in clear bottles. Do keep it wrapped in its pretty patterned tissue paper and away from direct sources of light though!.
