What
The idiosyncratic, culty estate of Paris sommelier Cédric Bouchard, launched in 2000.
Where
Landreville, Côte des Bar; 3ha all farmed organically.
Why
Bouchard is one of the original proponents of single-site, single-vintage (although not labelled), single-variety. Low yields and a focus on physiological ripeness coupled with stainless steel vinification and no dosage create sapid, vinous wines with as little winemaker interference as possible.
What else
Roses de Jeanne is named after Bouchard’s grandmother. This bottling used to be part of a separate range called Inflorescence but since 2014 all of Bouchard’s production falls under the Roses de Jeanne brand. The wines are bottled at only 4.5atm vs. 6atm for most champagne to create a creamier mousse.
Tasting Notes
Opens quietly, with shrill, matchstick whiffs of ethereal fruit. For some time it feels tight, acidic and closed. Upon opening, the stone fruit builds, acquiring sylvan notes of maitake mushroom and beginning to feel quite plump by the mid-palate. A powdery finish rich with dried peach and vinosity evolves into a fine toasted bread character a few hours after opening.
Try It With

When To Drink
Entrées or snacks.
Perfect For
Your champagne collector friend.
Tatler Tip
While I don't often decant champagne, I would consider it here.
TL/DR
Tightly coiled, savoury and esoteric.
