What

One of the top ten largest houses in champagne, founded in 1785, known for its affable, Pinot-driven style and bold marketing, newly invigorated by the arrival of young, ambitious cellarmaster Émilien Boutillat.

Where

Reims; 65ha of estate vineyards are shared with Charles Heidsieck, certified sustainable (HVE) and more than 240 grower partnerships.

Why

This Pinot-dominant rosé is very generous with the red, now at 15% (all Pinot, mostly from the famous Les Riceys, known for still rosé), but its overt strawberry charm is wrapped in Boutillat’s trademark smoky reduction, giving it a more sophisticated appeal.

Piper has been B Corp certified since 2022.

Tasting Notes

This opens with light smokiness but with a decidedly cedary, pencil shaving quality, backed by austere tones of rhubarb, celery and seltzer. There is a mouth-filling mousse that gradually disperses to reveal a light, fluid texture. Fresh acidity picks up as the palate continues, while the fruit here is more overt and less green, with a sweet strawberry character, even growing in sweetness as the wine warms. At the end the acidity feels slightly submerged and the yeastiness is not as evident as on the nose, though the flintiness returns on the finish like a satisfying full stop.
