A grower estate in the Barséquanais (in the Côte des Bar) dating to the 19th century that started producing and selling champagne with 100% of their production in 1986, managed by husband and wife duo Roland Piollot and Dominique Moreau.
Polisot, Côte des Bar; 10ha, all in Polisot; 62% Pinot Noir, 19% Chardonnay, 12% Pinot Blanc, 6% Meunier and 1% Arbanne, now completely certified organic and biodynamic.
This estate produces several site-specific cuvées, often monovarietal. Come des Tallants is a sloped plot of just under 1ha behind the town of Polisot with a full southern exposure and Kimmeridgian marls. The vines here—massale selected Pinot Noir—were planted in 1980, creating wines of great depth and concentration that are entirely unembellished, with no oak (stainless steel fermentation only), no fining, filtration or added sugar.
Piollot has an unusually high level of Pinot Blanc thanks to Roland’s father, Robert, who planted a plot of the variety in 1955, when it was a rather unpopular choice.
This starts clean, powdery and soft with Meyer lemon, violets, sage, sugared almond and breadsticks. Lovely, rounded peachy fruit washes over a foundation of Meyer lemon with an edge of lime. Pinot's meatiness comes through more on the palate, giving a sour, metallic background brininess that adds edge and intrigue. There is a grainy texture and malty biscuit quality to finish, gently offset by tightening bitterness.
