A grower estate in the Barséquanais dating to the 19thcentury that started producing and selling champagne with 100% of their production in 1986, now completely organic and biodynamic. The estate produces a great number of site-specific cuvées, often monovarietal.
Polisot, Côte des Bar; 10 hectares, all in Polisot; 62% pinot noir, 19% chardonnay, 12% (unusually high) pinot blanc, 6% meunier and 1% arbanne.
Come des Tallants, a plot of just under 1 hectare behind the town of Polisot with a full southern exposure and chalky marl soils. The vines here are over 40 years old, creating wines of great depth and concentration.
Roland Piollot is the husband of Dominique Moreau of Marie Courtin, another star in the village of Polisot and the Côte des Bar.
The nose opens with delicate lemon sherbet, baker's yeast and saltine cracker, all quite taut and briny. More floral on the entry, with soft notes of narcissus, there is a similar lemon base but with a miso-like earthy savouriness behind it that becomes more forceful with time, culminating in a very salty finish. The acidity is fresh but not quite as much as expected; the freshness seems to be coming more from the tone of the flavours.
