A new project in champagne started in 2015 by a young couple with viticultural backgrounds: Justine Boxler from Alsace and François Petit from Avize.
Avize, Côte des Blancs; approximately 1.5 hectares vines in Avize with some in Cramant and Oger, all on chalky soils.
Only 4500 bottles of this cuvée were produced, which is based on the 2017 vintage but uses 30% reserve wines to add depth and roundness to the tart fruit profile. The vines are farmed organically and diligently, with a focus on building up the soil structure and biodiversity.
The vines were planted between 1937 and 1961, some by François’ grandparents using sélection massale.
Tight and green in tone, the nose is bright with granny smith apple and tender leafy greens, with a mellow yellow pomelo citrus beneath. Fresh and clean again on the entry, it retains that same hint of greenness, lots of acidity and some clicky, sharp phenolics (tannins). The yeast component is moderate, except for a subtle salinity. Bitterness rises on the back, along with some barley sugar nuttiness.
Fresh dishes heavy on fragrant herbs (e.g. Thai or Vietnamese dishes as long as they're not too sweet).
