What

One of many “Vesselle” family estates making wine in Bouzy, particularly known for its unusual “Oeil de Perdrix” that straddles Blanc de Noirs and Rosé

Where

Bouzy, Montagne de Reims; roughly half their 13 ha are in Bouzy, the other half in the Côte des Bar. 90 per cent are pinot noir.


Why

This tiny Clos of about 820 square meters, one of only 21 in Champagne, was first made as a single vineyard in 1995. It’s fermented in 3 barriques—1 new, 1 one year old and 1 two years old—but made without malolactic fermentation to increase its ageing potential.


What else

Although they are pinot noir specialists, they also bring a buxom sensibility to their savoury B3 Blanc de Blancs

Tasting Notes

The nose is all pinot-rich, sapid fruit: blackberries, mushrooms, meltingly ripe yellow plums, earth and sousbois. The palate feels quite mature and volatile, with melon fruit, a spicy, mouth-filling richness but also a slightly pinched, vinegary finish. Grainy texture keeps everything tight.

Try It With 

Southeast Asian mixed rice dishes with peanuts, garlic and coconut.
