The family estate taken over by former chemical engineer and current biodynamics adherent Franck Pascal in 1994, specialised in meunier-dominant cuvées, with their first biodynamically certified champagnes released in 2008.
Baslieux-sous-Châtillon, Vallée de la Marne; 7 hectares, mainly meunier, then pinot noir and chardonnay.
This sensitively-made cuvée is the star of Pascal’s production; the five “essences” are the contributions of nature to the flavour of the wine, acquired through the vinification process. The wine spends an impressive period on its lees, giving it ample space and time to develop layers of complexity.
The NV cuvée Reliance has a far greater proportion of meunier, showing a much funkier, esoteric expression while the Tolérance rosé is the same blend with an addition of red vinified meunier and pinot noir, creating a textured, complex, lightly medicinal profile.
This begins with a brothy, earthy nose, like dried apricots and autumn leaves slathered in miso with moments of cider apple. Earth, lemon peel and honey come to the fore on the palate along with a very forceful, rich mousse, impressive for a wine this age. The acidity is fresh but citrus peel bitterness is the dominant force, nicely balanced by the honey flavour without being overly sweet. This is very complete and harmonious and feels surprisingly youthful.

Another one that is quite "particular," you want to save this one for a group that is into natural wine and/or grower champagne (somebody used to drinking only big-brand champagne may struggle).
