The biodynamics pioneer in Champagne, first converted in 1989. Originally starting out as an RM almost a century ago, they are now a small house, with biodynamic practices still universally applied.

Notes Blanches is a unique Blanc de Blancs made entirely from 25 year-old Pinot Blanc vines, a rarity in the region but admired by founder Emile Fleury and his son Robert. In 2009, Morgane Fleury, daughter of current proprietor Jean-Pierre (third-generation) came up with the idea to produce a varietal, non-dosage, stainless steel fermented Pinot Blanc champagne and this rich but electric bottling is the result.
Morgane Fleury is also a trained sommelier and actress who represents Fleury all over the world.
Waxy and rich, this has a beeswax and macadamia nut oily opening, breadstick autolysis and Asian pear fruit with undertones of lavender. There is a slightly cleaner, greener fruit quality on the palate boosted by the brightness of the acidity, which is a spike through the fat of the plush, expansive midpalate. The acidity jabs right through on the finish, electrifying everything. There is lovely, lightly earthy yeastiness on the back, like wet clay, anise seed and white crackers.
