A grower estate based at the 1,000 year-old Cluniac priory Domaine Sainte Eulalie, operated by Edouard Duval of EMW Fine Wines since 2000.
Bligny, Côte des Bar; 28 hectares, mainly pinot noir (80%), with the rest chardonnay and meunier.
The pinot comes from three hilltop plots and is then partially matured in 600-litre oak casks, which files off some of the raw material’s assertive sharpness. This is characterful and esoteric, and it has much more energy than many Blanc de Noirs.
The saignée d’Eulalie remains a highlight of the range with rhubarb and rosehip fruit with a captivating spiciness and delicate green peppercorn lift.
The nose opens very shrill and sharp, with piercing green apple and horseradish. Iodine and seaweed add complexity to green apple on the entry, which is followed by a stream of flavours coming all at once: coriander, green peppercorn, celery stem, green florals. There is quite a grainy texture that provides structure, while acidity is elevated but not sharp. Intriguing on its own and potentially quite interesting with food.
Fragrant, herbal salads: Thai or Vietnamese or a classic western green salad with grassy olive oil and chopped herbs.

Somebody whose signature scent is Hermès Eau de Rhubarbe.
The flavour profile here is quite particular, if not necessarily "natural" in style, so reserve it for the adventurous or at least open-minded.
Assertive, esoteric and herbal.
