What

A chardonnay-specialist grower in the Côte des Blancs since 1971, run by founder Claude Corbon’s daughter Agnès since 2006

Where

Avize, Côte des Blancs; 6ha in the Côte des Blancs and the Marne

Why

Only Avize Grand Cru grapes are used for their vintage wines; only the “cuvée” of the pressing is used. The wines are made with no malolactic fermentation, no fining and no filtration to preserve the vineyards’ characteristics. Wines are released when ready after extended time on lees.

Tasting Notes

A nose of heart-notes, with ginger biscuits and digestives, honey lemon and a peppering of washed rind cheese. Quite rich and full on the palate with an almost oily texture but with ample acidity and energetic mousse (despite its maturity) that help maintain balance. Generous and polished with a long, flavourful finish.

Try It With

Fatty or cartilage rich pork dishes.
