What

A newly revitalised cooperative in the Coteaux Sud d’Épernay has been helmed since 2019 by the young Fabien Daviaux, who has taken the cooperative organic.

Where

Chavot-Courcourt, Coteaux Sud d'Épernay; 5ha, all organically certified as of vintage 2023.

Why

The innovative Daviaux, who took over the management of the cooperative from his father after spending time abroad in South Africa, California and New Zealand, has used a novel approach with this cuvée, which uses frozen must from the previous vintage to kick off the fermentation. The characteristic blend of Chardonnay and Meunier (this region lies on the boundary between the Côte des Blancs and the Vallée de la Marne) has produced a joyous, exuberant wine with some stylistic nods to natural wine (there are no added sulfites or sugar).

What Else

The label (and matching cap) are adorable, depicting a pair of astronauts looking back at earth from a vineyard established, one can only assume, on the moon.

Tasting Notes

This opens clean with a primary, attractive brightness like underripe pineapple and mango, tiare flower, white tea and freshly laundered linens. It continues zingy and bright on the palate but with a white rabbit candy milky sweetness around its pretty, primary lime and green apple fruit. The malty quality really emerges on the back, for a tasty, satisfying finish.
