This Brut Nature cuvée leaves the grapes totally “exposed,” expressing their full sauvage pinot qualities from heady florals and grounded earthiness to something slightly animal.

Tantalising notes of steamed brown sugar cake are laced with pretty gardenia florals and brightened by yuzu fruit, making up a striking and rather unusual nose with a marked ozone sharpness. A slightly feral, new leather and smoke note is the first to hit the palate, with very tart acidity beneath; a full, rounded middle helps connect the two and create a needed sense of softness.
Slightly feral, gamy meats: game birds, lamb or goat.
