Travin Singh’s company Less & Co has saved more than 2,500kg of food waste by turning it into drinks. It is behind the beer brand Crust, which uses surplus bread from local bakeries—even experimenting with locally grown botanicals as hops substitutes—and co-produces beers with hospitality venues. It has also developed Crop, a range of soft drinks made from fruit waste. The company has expanded to Japan.
