A leading figure in Philippine dining, Antonio “Tony Boy” Escalante has shaped how Filipinos experience food and place through the expansion of the Antonio’s Group of Restaurants. Best known for Antonio’s in Tagaytay, he created a destination restaurant that continues to attract patrons seeking refined Filipino hospitality. That legacy reached a new milestone in 2025 when Antonio’s received a notable Michelin recognition at the inaugural Michelin Guide Ceremony in the Philippines, marking a significant moment for both the restaurant and the country’s culinary reputation.
Escalante’s portfolio has grown steadily in recent years. Antonio’s at PGA Cars brought his flagship experience to Mandaluyong City, while Breakfast at Antonio’s opened at Robinsons Magnolia to serve a broader city audience. Pedro the Grocer has also expanded to new locations, reflecting the group’s diversification into retail. This momentum, supported by financing from Landbank, signals Escalante’s continued confidence in developing concepts that bridge quality, accessibility, and consistency.
Beyond his restaurants, he remains active in collaborations, including the 2025 The Table pop-up, where he presented a seven-course menu using locally sourced ingredients. His longstanding commitment to regional produce, sustainability, and mentorship has shaped a generation of chefs and restaurateurs. With recognition such as the 2024 Culture Award from Cadiz City, Escalante maintains a position of influence, elevating Filipino cuisine while strengthening the country’s presence in the global dining landscape.

Did You Know?
Tony Boy Escalante enjoyed traveling as flight attendant for a decade before deciding on culinary career. After some courses in Australia, he worked at the now-defunct Mandarin Oriental Manila's The Tivoli restaurant during the week for three years. Weekends were spent in Tagaytay where he started building the foundation for his own restaurant.
