Clearly, grandmothers know best. Supaksorn “Ice” Jongsiri aims to reinvent southern Thai food using fresh, slow-cooked, sustainably sourced ingredients in dishes that draw on ancestral tradition. Ice owns nine restaurants, including the popular Baan Ice and Sorn, a two-Michelin-starred eatery that ranks 11 on the Asia’s 50 Best Restaurants list. All his chefs, himself included, have studied only with their grandmothers—not a culinary graduate among them.
