After Stephen Co’s passion for bioscience and entrepreneurship was boosted by a master’s scholarship to Cambridge and a stint at Rutgers’ Food Innovation Center, he introduced plant-based versions of Philippine food icons such as sisig and longganisa through his company WTH Foods’ Umani brand. Its crab bites, which won Singapore’s Meatless Meat Challenge 2022, will doubtless find their way on the menus of the 50 Umani Bistro kiosks the company plans to open.
