Square Jao jokes that she “doesn’t really know how to cook vegetables, only to eat them”, but her vision for vegan cuisine nonetheless led her to co-found Plants, Taiwan’s first plant-based, gluten-free, whole-food restaurant. Plants hopes to promote an environmentally friendly diet not just through its dishes, but also its sustainable sourcing and cooking practices.
