Prasant Raj Gurung is not here to make drinks that disappear into the night unnoticed. At C108, the café-turned-speakeasy he co-founded on Old Bailey Street, every cocktail is built with intention—bold, balanced and steeped in both heritage and modernity. His journey from Nepal to Hong Kong has been shaped by kitchens, coffee bars and a relentless curiosity about what makes a drink truly memorable. It’s a path that began with his parents, both chefs, and took him from brewing coffee at Pret to standing behind some of the best bars in the city. Now, as the bar manager at C108, he’s making a name for himself on his own terms.

His cocktails nod to the classics but are infused with ingenuity—his Vitamin Sea reinvents the gimlet with a whisper of seaweed and sesame oil, while Pete, a balsamic-kissed take on the Bloody Mary, lands somewhere between cocktail and liquid Caprese salad. Beyond the drinks, Gurung is crafting a space that feels intimate and unpretentious, where regulars are known, the atmosphere is just the right level of lively, and the drinks never feel like an afterthought.
