For tempting Taipei with his adventurous fusion cuisine

After 15 years working in LA, Paul returned to Taiwan to open Impromptu by Paul Lee, where he serves up a contemporary take on American cuisine, integrating the flavours of Mexico and Japan. Impromptu became one of only 24 restaurants in Taiwan to receive a Michelin star in 2019.
