Under the tutelage of Antonio Lai at Quinary, he absorbed the precision of a master, learning that a cocktail is not just about flavour but structure, texture and aroma.
Now at Long Bar at Raffles at Galaxy Macau as chief mixologist and bar manager, he works with the same thoughtful process. His drinks arrive at the table clear in their intent, perfectly judged, the result of hands that have repeated the same motions a thousand times over, each time refining, each time improving. Mak is a bartender on the rise, not because he deserves the spotlight, but because his work makes it impossible to ignore.
