Ming Kin Lam

Chef, Chou Chou and Longtail

 

Ming Kin Lam never received any professional chef training, but with a love for cooking one day he decided to give up his university studies and pursue his dream to become a chef. Since then, he has accumulated rich experience from many top-notch restaurants including Mandarin Oriental Hong Kong, three-Michelin-starred French restaurant Jean Georges in New York,and one-Michelin-starred Apicius and one-starred Guy Savoy’s Le Chiberta in Paris. In 2014, after looking for authentic ingredients throughout Taiwan and by integrating traditional and modern cooking skills, he took the helm at Achoi in Amba Taipei Zhongshan, delivering contemporary cuisine that was widely acclaimed by local epicures. This year, his restaurants Chou Chou and LONGTAIL Restaurant & Bar were honoured with The Plate and one Michelin star respectively in the Michelin Guide 2018. He also opened a third restaurant, Wildwood Live Fire Cuisine, in the Eastern District of Taipei. Ming Kin believes that a person who wants to be successful must do and devote himself to what he loves and should not fear hardships and difficulties.
