Acclaimed chef, Miko was the frst Philippine representative to compete at both the 2018 SIGEP Gelato Convention as well as the Valrhona Chocolate Chef Championship. Clearly a sweet commodity, he spoke not only at the Madrid Fusion 2016, but also at the Manila convention that same year. When not competing internationally or keeping tabs on all his establishments (including, most recently, three dessert concept stalls at PowerPlant Mall’s new The Grid Food Hall), Miko bakes for fun, indulges in desserts and watches Netfix shows or movies to destress. Oh, and by the way, Philippine Tatler T.Dining’s Best Pastry Chef for 2018 is currently in the process of writing two cookbooks.
