The award-winning chef is also the proprietor of several successful restaurant brands
Chef Margarita Forés is a celebrated restaurateur whose contributions to Philippine dining have earned her multiple honours, including the Asia’s Best Female Chef honour in 2016, and the titles of Cavaliere dell’Ordine della Stella d’Italia (Knight of the Order of the Star of Italy) in 2018, and United Nations Ambassador for Gastronomic Tourism in 2019.
Forés began her culinary journey as a caterer, managing dinners and events with a small team. This early experience led her to professionalise her business and transition into a full-time restaurateur. She entered the restaurant business with Cibo in 1997, offering affordable, authentic Italian cuisine in a cosy, modern setting that introduced Filipino diners to an elevated dining experience.
Cibo’s success paved the way for other ventures, including Grace Park Dining, with its farm-to-table concept; Lusso, a champagne bar with elegant French-Italian offerings; The Loggia, offering a fusion of Filipino and Italian cuisine at the historic Palacio de Memoria; and Museya Kafé at Ayala Museum. Forés also operates a catering business and a florist service, now rebranded as Margarita Signature Caterer and Margarita Floralscapes. In 2024 she announced the rebranding of her F&B empire under Margarita, including a new signature fine dining restaurant at Ayala Triangle.
Twenty-seven years after debuting with Cibo, Forés continues to evolve her brands while supporting local farmers, fishermen, and artisans. Her dedication has not only enhanced the Filipino dining experience but also fostered a greater appreciation for Filipino cuisine.
