Margarita Fores sparked a deeper appreciation for local flavors

As the proprietor of several successful restaurants, Margarita Fores has an entire battalion of kitchen staff and servers in her command. But before that, Fores started her career as a caterer for small dinners and events with just a small team of assistants. That made her realize that she had to professionalize her business if she wanted to become a full-time restaurateur.

Fores entered the restaurant scene with Cibo in 1997, a novelty in a milieu dominated by franchises. It offers reasonably-priced authentic Italian cuisine in a modern yet cosy atmosphere, easing the Filipino diner to an elevated culinary experience.

Cibo’s success kick-started the launch of other outlets thereafter: Café Bola, which offers Fores’ take on Filipino comfort food, the champagne bar Lusso, Grace Park with its farm-to-table cuisine, and The Loggia’s mixed Filipino-Italian menu. Fores also runs her own catering company, Cibo Di M, as well as a floral and food shop called Fiori Di M.

She earned distinctions for her efforts, that includes being named Asia’s Best Female Chef in 2016, receiving the Cavaliere dell’Ordine della Stella d’Italia (Knight of the Order of the Star of Italy) in 2018, and becoming a United Nations Ambassador for Gastronomic Tourism the following year.

Twenty-five years since debuting with Cibo, Fores has become an inspiring role model for not just aspiring chefs and restaurateurs. She also changed the way we look at Filipino food, to awaken a deeper appreciation for local flavours.
