Lanshu Chen, head chef of Le Moût Restaurant, grew up in a large, food-loving family in Yilan. As a child, she loved to cook. After graduating from the Department of Foreign Languages and Literature at the National Taiwan University, she went to Paris to study cooking, before returning to Taiwan where she opened Le Moût Restaurant in 2008. Le Moût Restaurant has been recognised as one of Grand Chef Relais & Châteaux's restaurants every year since 2012 and has been on S.Pellegrino Asia's 50 Best Restaurants list for four consecutive years. Lanshu's cooking style combines oriental flavours with the elegancy of French cuisine and has met with much praise. However, as Lanshu's concept is not consistent with global dining trends, she decided to shut down Le Moût Restaurant at the end of 2018 and is carefully considering her next move.
