Chef-patron, Odette, Claudine
One of Asia’s top chefs, Julien Royer is helping to develop the next generation of culinary and hospitality leaders
Julien Royer is best known as the chef-owner of Odette, a three-Michelin-starred modern French restaurant in Singapore. Since 2019, Odette has maintained its coveted three Michelin stars for seven years in a row and remains one of the longest-lasting Asian restaurants on The World’s 50 Best list. Celebrating 10 amazing years since its founding, the restaurant is undergoing a refresh—it’s set to reopen in December 2025 with an entirely new look following a three-month long renovation.
Beyond Odette, Royer is the chef-patron of Claudine, a French neo-brasserie in Singapore that’s open since November 2021, where he recently celebrated the launch of the Terrace @ Claudine, a space that truly celebrates the French ‘joie de vivre’.
Royer himself has earned well-deserved recognition, including Restaurateur of the Year from Les Grandes Tables du Monde, and the prestigious Estrella Damm Chefs’ Choice Award. The latter is the only peer-voted award in The World’s 50 Best Restaurants programme and is given to the chef who has made a positive impact on the global culinary scene.
Royer worked for Michel Bras in France and Antonin Bonnet in London, before starting his Singapore culinary adventure as chef de cuisine at Jaan at Swissotel The Stamford and Brasserie Les Saveurs at The St Regis Singapore. The Cantal-born culinary talent soon caught the attention of food critics and the public with well-crafted, produce-focused dishes.
The humble chef is also known to be a great mentor who values each and every member of his team. In fact, a number of Odette staff have been with the restaurant since its pre-opening days. “I want people to be happy, to have fun at work, to feel comfortable and proud,” he says.
“To develop the next generation of hospitality leaders, I believe I have a responsibility to infuse positivity, inspire through knowledge, cultivate an uplifting culture and continuously challenge one another to move the industry forward”
