One of Asia’s top chefs, Julien Royer is helping to develop the next generation of culinary and hospitality leaders

Julien Royer is best known as the chef-owner of Odette, a three-Michelin-starred modern French restaurant; and the chef-patron of Claudine, a French neo-brasserie in Singapore. He is also the founder of the one-Michelin-starred Louise, a French bistronomy-style restaurant in Hong Kong. Royer has clinched a raft of awards for his restaurants across various industry lists—in fact, Odette received the coveted Gin Mare Art of Hospitality Award in 2022, and also placed at No. 14 on the World’s 50 Best Restaurants List 2023.

Royer himself has earned well-deserved recognition, including Restaurateur of the Year from Les Grandes Tables du Monde, and the prestigious Estrella Damm Chefs' Choice Award. The latter is the only peer-voted award in The World's 50 Best Restaurants programme and is given to the chef who has made a positive impact on the global culinary scene.

Royer worked for Michel Bras in France and Antonin Bonnet in London, before starting his Singapore culinary adventure as chef de cuisine at Jaan at Swissotel The Stamford and Brasserie Les Saveurs at The St Regis Singapore. The Cantal-born culinary talent soon caught the attention of food critics and the public with well-crafted, produce-focused dishes. In a partnership with The Lo & Behold Group, he opened Odette in 2015, which has since been the island’s foremost fine dining establishment. In November 2021, Royer opened his third restaurant, Claudine, in Singapore’s Dempsey area offering a relaxed style of dining with à la carte French cuisine. “I’m very excited about the possibility of creating a place that brings people together over the simple pleasures of good food and drinks in a lively atmosphere. I believe people look to return to comfort and authenticity more than ever before.”

The humble chef is also known to be a great mentor who values each and every member of his team. In fact, a number of Odette staff have been with the restaurant since its pre-opening days. “I want people to be happy, to have fun at work, to feel comfortable and proud,” he says.

“To develop the next generation of hospitality leaders, I believe I have a responsibility to infuse positivity, inspire through knowledge, cultivate an uplifting culture and continuously challenge one another to move the industry forward”
