Jay Moir is the co-founder of Layla – Eatery & Bar (2016) and Summer Experiment (2019), two prominent bars in Saigon. He is known for his "Alcohol Alchemist" style, creating unique cocktails and high-quality mixology experiences that combine local ingredients, recycling methods, and "garden craft" techniques.

Under Jay's leadership, Layla – Eatery & Bar expanded from its original space into a 240-seat bar with a diverse cocktail menu, including pre-batched drinks like Pop My Cherry, Highballin’, Loco For The Coco, and Ant No Harm With This Margarita. Summer Experiment was ranked 77th in Asia’s 50 Best Bars 2021, noted for its "farm-to-bar" philosophy and sustainable practices in mixology.

Jay Moir also builds a circular bar and brunch ecosystem, utilizing ingredients across his venues, while training and inspiring the next generation of bartenders, elevating mixology standards and customer experiences in Vietnam.
