It takes an incredible amount of savvy and more than a little luck to make it in Singapore's F&B scene. And Javier Perez has proven he has got plenty of both. The 40-year-old Puerto Rican, who founded Series of Intentions, which owns the Kilo and Grain Traders brands, has built a veritable empire of trendy establishments, including Camp Kilo Charcoal Club, Kilo Kallang and Kilo Lounge, as well as overseas outposts such as Kilo Bali and the soon-to-be-open Kilo Jakarta. The gregarious restaurateur also has plans to bring the Grain Traders experience to Dubai and Melbourne.
