Here’s a successful Millennial story for you. At 21 years old, Gab dropped out of Fine Arts school to start a restaurant, with his girlfriend Thea Rivera, and without any formal training. He was banking on a love for food, some great travel experiences, and their relationship to anchor his vision. The final product is the oft talked-about The Girl + The Bull thanks to the modern menu, which surprised foodies around town in 2013, and quickly grew by word-of-mouth. Their signatures included Buttermilk Fried Chicken and Faux Twix. He went on to prove that he was no one-hit-wonder with the opening of 12/10 in 2014, an izakaya, omakase, sake and Japanese whisky joint with dishes designed for two to share. Just as soon, Gab earned a spot in Madrid Fusion Manila for his take on street food. You can find The Girl at the front of house, and The Bull in the kitchen or behind the bar.
