Fudy Chen takes food from his farm to Taiwan’s most in-demand tables

Fudy Chen is the deputy general manager and culinary director of Gloria Hotel Group, an institution in Taiwan's tourism industry since 1972. Chen manages all the restaurants within the group, including L'idiot, TK Seafood and Steak, and East End Bar, which was the first hotel bar to have the honour of being in Asia’s 50 Best Bars in 2017.

He graduated from Cornell University’s Food and Beverage Management Department, studied in Per Se in New York and Manresa in Los Angeles, and entered the family hotel business upon returning to Taiwan. Recently, Chen has been busy with Marvel Corporation, which he established to expand his farming business. He grows crops naturally on 2,000 square meters of farmland in Taipei and supplies them to the group’s restaurants and markets.
