Fudy, the founder and head chef of farm-to-table restaurant Wild Donkey and its sister cafe Baby Donkey, is known for his terroir-driven cuisine. His culinary philosophy earned him Gen.T Leaders of Tomorrow recognition in both 2016 and 2017. A decade of refinement has taught him to see the deeper complexity and emotional connection behind ecosystems and cooking, to understand what is worth dedicating a lifetime to, and to build a team where every member can listen, follow and take full ownership.
Through the daily rhythms of farming and composting, he has come to understand that sustainability is, at its core, an act of love. Entering the next decade, Fudy is not chasing expansion for its own sake. Instead, he aspires to remain honest and sincere—exploring nature like a lifelong student through continuous reading, obsessive research and imagination. In the coming year, he will pour his energy into caring for his family and team, continuing to nurture the cycle of sustainable love between land and table.
