This food scientist is making tempeh the protein of the future
Tempeh, an Indonesian staple made from fermented soybeans, is rich in protein and probiotics while producing 94 per cent less carbon dioxide than beef. Why, then, figured Driando Ahnan-Winarno, can’t it be a global favourite too? With his mother and grandfather, he launched the Indonesian Tempe Movement in 2014, which now works with institutions and individuals across 25 countries to promote the food. In 2019, he started Better Nature with Christopher Kong, Elin Roberts and Fabio Rinaldo to innovate on tempeh fermentation. The B Corp’s products are now sold at major supermarkets in the UK, Europe and Middle East. Driando has also written the fermentation guide The Tempeh Bible.
